Healthy and Delicious Grilling

Firing up the grill this weekend?  Me too!  While the smell of sizzling burgers (especially over charcoal) is enough to bring the neighbors sniffing around your backyard, there are more artery-friendly options out there.  I’ve been experimenting with grilled veggies.

My personal favorites are the “holy trinity” of eggplant, zucchini and red pepper.  Slice them lengthwise, about a half-inch thick.  Grill for 5- 10 minutes per side on medium heat.  Toss them with pasta or a little goat cheese and you have a meal.  Save the leftovers for sandwiches and salad toppings throughout the week.   Here are some more healthy grilling recipes from Eating Well.com.  The salmon and the peach sundaes both look yummy!

Yoga plus Mount Tabor Hike this Saturday

Anne has a fabulous double-header planned for you this Saturday.  We head to Yoga Union Saturday at 12:30 for their free Yoga 101 class.  Then join Anne and her crew at Mt Tabor at 2 pm for a 90 minute hike.   Meet us at the back stairs (close to 69th and Belmont).  Runners/ walkers /stair climbers of all levels are welcome to join us for the yoga or the hike or both!   Who wants sexy summer legs?

Forest Park hike this Saturday May 15th

Join Anne and her Fluid Fit Club crew for a five mile hike at 2 pm this Saturday May 15th.

We will start at NW 28th and Upshur and head up the Lower Macleay Trail to Pittock Mansion.  Your reward for this moderately steep hike is the million dollar views of the city from the grounds of Pittock Mansion.   Allow about two hours round trip.  Call Anne to R.S.V.P. All levels welcome.
