Fluid Book Review “A Year In The Village of Eternity” Asparagus Frittata recipe

I am reading “A Year In the Village of Eternity” by Tracey Lawson. She describes her time spent in Campodimele Italy where the residents have gained fame via their unusually long lives. Most residents enjoy a quality of life not seen in other cultures including low incidents of common diseases like high blood pressure and high cholesterol, leading healthy vibrant lives into old age. Can you imagine your 80 year old grannie riding her vespa up and down cobblestone streets to tend to her olive trees, feed her chickens and gather fresh eggs for breakfast?

What I love about this book is each chapter includes several recipes from the locals, including this asparagus frittata recipe. You will have to read the chapter “Looking for Mamma” if you want to learn more about the hunt for the elusive green stalks – evidently very similar to truffle hunting. To prepare the asparagus the author suggests you hold the root end of the spear, snap off the tip and continue snapping down until you come to the root end which you discard. I don’t know why I never thought of doing this but it makes much more sense than snapping off the ends then chopping them into pieces.

Wild Asparagus Frittata:

  • 20 wild (or young fresh green) asparagus spears
  • olive oil
  • 10 fresh organic eggs
  • sea salk
  • flat leaf parsley

Wash the asparagus, drain them and snap into pieces as described above. Heat a few tablespoons of olive oil in a non stick pan over medium/ high heat. Cook the asparagus for two minutes. Meanwhile crack the eggs into a bowl and add a pinch of salt and a handful of parsley and beat vigorously. Pour the eggs into the pan and cook for about four minutes. When the underside of the frittata is golden and crispy remove the pan from the heat, place a plate over the top and quickly flip the pan so the eggs are now cooked side up. Slide the frittata back into the pan and return it to the heat. Cook for another minute, then slide it onto a plate. Slice it into squares and serve either warm or at room temperature. Serves four to six.

Spring Cleanse 2012 – Week One

Week one of our Spring Cleanse is underway!

I am taking part in Danielle Melanson’s Spring Cleanse both as a participant as well as leading the Friday 7 am workouts. Here are some shots from our outdoor strength and cardio session this week at Sellwood Park.

This cleanse is an elimination diet which means for three weeks you do not eat foods that are suspected allergens or may cause and inflammatory response in your body. You then reintroduce these foods one at a time to see how your body reacts. We have cut out white sugar, caffeine, corn, soybeans, dairy, alcohol, gluten, and nightshades (potatoes, tomatoes, peppers). We are taking a supplement that includes 30 grams of protein and vitamins and nutrients that aid in the detoxification process. Danielle encourages daily activity, weekly acupuncture, and saunas to aid in the detoxification process.

I am eating loads of veggies, salad and fruit for breakfast, some rice and lean protein. I have been experimrnting with my smothie ingredients and I came up with a new baked chicken recipe that includes garlic, onions and mangos. Yummy. My goal for the next few weeks is to eat a cleaner diet based primarily on veggies, fruit and protein so that I look and feel my best.

Danielle hosted the first of three evening support groups on Friday night and it was really helpful to hear from past participants about what has (and has not) worked for them. It seems for most of us wine and coffee are the two most difficult things to give up. I had a bit of a rough start on Tuesday morning when I accidentally made my smoothie with yogurt instead of rice milk. Then on Tuesday night I “accidentally” ate a pork slider and a mojito. Uggghh. Why do you have such delicious food Portland!?!?

Maui Recap 2012 beach yoga, last sunset

Ok seriously this is my final post about our Maui adventure.

I mentioned our daily activities, here is our group doing beachfront yoga and Pilates. What an excellent way to start the day!

 

We did allow some time for relaxation, hitting the beach at a few resorts in Kaanapali and Wailea. Here is Leslie soaking up some vitamin D at the Sheraton in Kaanapali. I like Kaanapali and Napili Bay for the great swimming, the water is calm and clear and there is less chance of getting washing machined by the breakers than at other beaches.

And here we are at the Grand Wailea. We stopped in to view the grounds and the art gallery. Lots of interesting local artist’s woodcarvings, sculpture and paintings. Then of course we headed to the Bistro Molikini for a bite and a Mai tai.

Maui 2012 Recap Iao Needle, Botanical Garden and Mama’s

Maui recap part four…

In addition to our daily Pilates and Yoga classes we also managed to get in several hikes. Here we are at the Iao Needle near Wailuku.

We found a side trail up a little stream. It was beautiful and reminiscent of Oregon (except that it was in the 70’s and sunny).

And here are some shots from the botanical garden. We stumbled upon this tiny place as we were driving and I didn’t know what to expect but I was really glad we stopped here. Orchids growing right out of the sides of trees, a million different types of palms. Ned was our official botanist and knew the names of lots of these plants.

We finished the day (I told you this trip was action packed) at Mama’s Fish House in Paia for pupus. Everything I had heard about this place was dead on, the view was ridiculous, the service was amazing and the food was ono!
