These past few months, I have found so much joy in connecting with local people via weekly interviews! We’ve learned about everything from how to improve your internet speed, and lower your car insurance bill, to how to care for your skin. Laura showed us Qi gong exercises and hand mudras, Alice and I discussed trail running with or without a mask. We talked mental health strategies with my business coach Heather Stewart (maintaining structure during uncertain times), and Julia AKA The Unclutter Coach, and Elliot (threatened mindset vs. challenged mindset).

Corn Salad With Cojita and Pickled Onions

I made this delicious, salty, tangy, sweet, crunchy, perfect for July 4th corn salad last weekend, and for once in my life I stuck to the recipe. Well I did have one avocado on the counter who was screaming “eat me now or loose me forever”, so I sliced it and put it in the salad.

Have you heard I’m now on instagram? It’s true! Smitten Kitchen (where I saw this corn salad recipe) is one of my favorite finds. They have beautiful photos, the recipes are typically easy-ish to follow, and if you click on the photo it takes you right to the recipe.

This is sort of an upside down salad, in that the creamy dressing is on the bottom, and you pile crisp veggies on top. Tajin can be found at most grocery stores (this is the stuff they sprinkle on street corn in Mexico, you can also use it to zaz up a michelada). I made extra of the pickled onions and have been using them all week on eggs, salads, anything that needs a little zing. Try this recipe out and let me know what you think.

Corn Salad With Cojita and Pickled Onions

Ingredients:

  • 1/2 a small red onion, thin sliced
  • 2 tablespoons red wine vinegar
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 2 tbsp cold water
  • 4 ears of corn, shucked
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 3 oz crumbled cojita cheese
  • 1 lime, halved
  • Tajin seasoning
  • handful fresh cilantro
  • small avocado, sliced
  1. First make your pickled onions (don’t worry, this is really easy). Mix red onion with vinegar, sugar, salt, and water and refrigerate it while you work on the rest of the salad.
  2. Grill your corn (I do not have a grill so I just rolled these babies around in a hot pan to sear the outside a tad).
  3. Make your dressing – mix the sour cream, mayo, and cheese, and spread over the bottom over a serving platter.
  4. Once the corn is cool enough to handle, slice off the kernels and pile them on top of the cheese.
  5. Squeeze the juice of half of a lime over the corn, and top with pickled onions, avocado and cilantro. Sprinkle with Tajin (or a mix of chili powder and salt).
  6. Enjoy!

Have you met my friend Beth (if you have, you would remember for sure, she’s a hoot!).

Beth is a three-fer! Her personal life casserole consists of layers…she started as a physical therapist graduating in 2001, then went on to pursue certifications as personal trainer and nutrition coach as she observed that pursuing deep health is complicated. She started GO Training, a now 100% online personal training studio, so she could train folks without the constraints of a specific diagnosis to fill the gap between where physical therapy left off and a thriving fit person began.  That eventually led to connecting how food and nutrition patterns provide the energy for one’s movement practice, so she pursued her certification as a Level One Precision Nutrition coach.  This led to unraveling the complex relationships of life skills, habits, environment, and how we schedule our lives…so she pursued training as a Level 2 coach.

Beth believes your mindset, your cooking and life skills, and a sustainable movement practice leads to deep health.

She has also been working on incorporating social justice into her practice and community in the last year to make her business reflect her values and priories by taking classes like Social Justice for Fitness Professionals with Dr. Teeom Williams, and other steps to create a liberatory vision for her business.

Learn Mental Toughness Tips From Elliot Waksman of Portland Sport Psychology

Our LIVE interviews are zooming right along! I so appreciate all of our interviewees, and all of YOU for tuning in and asking great questions! This week, I’m excited for you to meet Elliott Waksman, director of Portland Sport Psychology.

Elliott has worked in the field of sport & performance psychology since 2010, helping individuals and groups boost their mental toughness. He has had the unique opportunity to collaborate with high achievers ranging from Olympic athletes, student-athletes, coaches, Special Operation soldiers, dancers, and physicians. His time in the trenches with those elite performers, confirmed his philosophy that developing mental skills, like resiliency, optimism, focus, and confidence helps everyone perform better, regardless of the stage.

*LIVE* Interview Saturday May 23rd with Chi Running Instructor Alice Diffely

I first met Alice during one of her Chi Running workshops years ago. As you may have experienced, being coached by someone else, and then videotaped while you move gives you a whole new insight into whether “your” reality matches “the” reality. Spoiler alert – I was surprised to learn that I was not in fact swinging my arms and legs like she had instructed me, even though that is what it “felt like” I was doing.

In addition to running and walking coaching, Alice is a Registered Yoga Instructor, Certified TRE® Provider, and Original Strength® Certified Coach. She has lots of tools in her tool box that all lead to one point, improving your body awareness. She shares with us her tips on running safety (yes or no to masks, best practices for running outdoors) in these strange times.

It’s a movement-based technique that enables your body to shake off accumulated stress and tension in order to down-regulate the nervous system and help bring it back into balance. I look forward to sharing this highly effective self-care tool with more individuals to help them find greater calm and more resilience during this challenging time.
• I’ll be offering Zoom classes through Portland Community College’s Community Education/Recreation & Wellness Department during their Summer Term and Fall Term. My Summer Term offering will be Yoga for Teen Athletes, intended for 12-17 year olds. My course proposals for Fall Term include Yoga for Runners & Walkers, a new course offering called TRE® & Yoga for a Calmer Nervous System, and potentially another section of the Yoga for Teen Athletes class.
• I also recently became an Original Strength® Certified Coach. The philosophy behind OS is that by revisiting movement patterns that we progressed through early in our lives, we’re able to press reset to rid ourselves of unhelpful movement habits and regain our ability to move in a more fluid, natural way. I integrate OS principles into a lot of my yoga teaching, and I look forward to offering some Facebook Live events or Zoom sessions soon to share this innovative approach with more clients.
